Uncle Eddie owned eight pancake houses in and around Great Falls, Montana, in the 1950s and '60s. Many summers, Don would visit his Uncle Eddie and begin learning the restaurant business. He let Don mix the pancake batter, but only his Uncle Eddie would prepare the secret ingredients he called the "dynamite." Years after Uncle Eddie's passing, Don acquired his famous pancake recipe. Juno Beach Cafe honors him by proudly serving his 65-year-old pancake recipe, affectionately known as "UEPs!".

This dish is scrumptious and features a savory blend of scrambled eggs, your choice of bacon, ham, or chorizo, along with diced tomatoes, avocado, peppers, onions, black beans, salsa, and Jack cheese.
