Uncle Eddie owned eight pancake houses in and around Great Falls, Montana, in the 1950s and '60s. Many summers, Don would visit his Uncle Eddie and begin learning the restaurant business. He let Don mix the pancake batter, but only his Uncle Eddie would prepare the secret ingredients he called the "dynamite." Years after Uncle Eddie's passing, Don acquired his famous pancake recipe. Juno Beach Cafe honors him by proudly serving his 65-year-old pancake recipe, affectionately known as "UEPs!".
Uncle Eddie Pancakes (UEP) - The Original or with blueberries Chocolate Chip with whipped cream Banana Nut with walnuts, bananas, and whipped cream. Shrimp 'n Grits or Browns - Pan sautéed shrimp blended with sweet onion, scallions, crisp bacon, and tomatoes in a garlic butter sauce on creamy grits or grilled hash browns, topped with cheddar cheese and two eggs, your way. Hush-Wee and Eggs - An old Lebanese breakfast we grew up on! Ground beef seasoned with onions and pine nuts, combined with scrambled eggs, and served with hash browns, Lebanese bread, feta cheese, and olives.
